Matured for over 12 months, the Extra Mature Wyfe is slightly harder than its younger self but still retains the recognisable succulent, nutty and creamy taste but with an extra strong tang. It is made with vegetarian rennet. Wyfe of Bath takes its name from Chaucer’s Canterbury Tales and, like the tale, when you cut into a Wyfe of Bath you will get a taste of old England.
This cheese can be purchased as a full round (approx 2.4 kilos), half round (approx. 1.2 kilos), or in segments and is vegetarian.
